Intro To “Tasty Tuesday”

One of my tweeps @MySillyBoys and I decided that it would be fun to share recipes that we love & that work… Sometimes, I think I’m Chef BoyarDEE- so here’s my first shared recipe. My recipes will always be easy, I’m not about the process- by any means, I’m more about the end result. I’ll have a new one every Tuesday, thus, the birth of “Tasty Tuesday.” Happy Cooking.

A Family Favorite, I call this one my “One-Pot Mexican.” I got the idea originally from Kraft Foods, so I have to thank them for it and I tweaked it and made it work for us. (My revisions are in blue).

You’ll Need:

1 lb. lean ground beef (I use ground turkey)
1 pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix (Store brand works just as well)
1 can (19 oz.) kidney beans, drained, rinsed (I use black beans, though Hubby likes me to use both black & kidney)
1 cup TACO BELL® HOME ORIGINALS® Thick ‘N Chunky Salsa (It doesn’t matter what brand the salsa is- really.)
1 cup water
4   flour tortillas (6 inch), cut into 1-1/2-inch squares (I leave these out)
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/3 cup BREAKSTONE’S or KNUDSEN Sour Cream (Again with the brand)
1/3 cup chopped green onions (about 1 large)

Get Cooking:

BROWN meat in large nonstick skillet on medium-high heat; drain.

ADD seasoning mix, beans, salsa and water; stir. Bring to boil. Simmer on medium-low heat 5 min.

STIR in tortillas; top with cheese. Cover; let stand 5 min. or until cheese is melted. Top with sour cream and onions.

Other Changes:

I leave out the onions since the Hubs is not a fan.
I add corn to the mix.
I add shredded lettuce as a topping.
I use tortilla chips (instead of the flour tortillas) to dip/scoop it with instead. Pretty much like nachos.
