<p><strong> </strong></p>
<p><strong>PLACE </strong>onions, carrots and celery in slow cooker;  top with chicken.</p>
<p><strong>ADD </strong>combined brown sugar, dressing, soy sauce and  ginger.  Cover with lid.</p>
<p><strong>COOK </strong>on LOW for 7 to 8 hours (or on HIGH for  3-1/2 to 4 hours).  During last 30 min. of cooking time, increase to  HIGH.  Stir cornstarch into reserved pineapple liquid; add to slow  cooker along with the pineapple and peppers.  Cook 30 min. or until  peppers are crisp-tender and sauce is thickened.  Serve over the rice.</p>

<p><strong>HEAT </strong>oven to 400°F.</p>
<p><strong>BROWN </strong>meat with peppers in large nonstick  skillet.  Stir in 1 cup salsa; simmer 5 min., stirring occasionally.   Remove from heat; stir in 1/2 cup cheese.</p>
<p><strong>SPREAD </strong>1/4 cup of remaining salsa onto bottom of  13&#215;9-inch baking dish.  Brush dressing lightly over both sides of  tortillas.  Stack 4 tortillas; wrap in waxed paper. Microwave on HIGH 20  sec. or just until warmed.  Spoon 1/3 cup meat mixture down center of  each tortilla; roll up. Place, seam-sides down, over salsa in dish.   Repeat.  Top with remaining salsa; cover.</p>
<p><strong>BAKE </strong>20 min. or until heated through.  Top with  remaining cheese. Bake, uncovered, 2 to 3 min. or until melted.  Top  with cilantro.</p>

<p>So after I made this, I made a grocery list for the month- also bold. One for Walmart &amp; one for Costco. I thought I&#8217;d buy the meat at Costco, but Hubby said he doesn&#8217;t want frozen Tilapia, so I&#8217;ll go buy that fresh tomorrow.</p>
<p>I went to Walmart today and I realized that I have a boat load of frozen ground turkey in the freezer, so I didn&#8217;t buy any of that. We already have turkey deli slices, tuna and some frozen chicken breasts. So I didn&#8217;t buy any of that&#8230; I&#8217;ll have to find the meat market- there&#8217;s one here in town tucked away on the back desert roads. Hubby tried to find it once and couldn&#8217;t so I&#8217;ll venture out tomorrow.</p>
<p>I am a shortcut cooker, so I don&#8217;t buy a lot of fresh items. Mostly because there&#8217;s only two of us and if I buy an entire head of broccoli, it&#8217;ll go bad before I get the chance to cook it all. So I buy frozen and canned- whatever. Judge me not. Today at Walmart we spent 104.24- and if you take off the inflatable pool, hand pump, shorts and other non-food items we bought- I think we did damn good for buying pretty much one month&#8217;s worth of food. This doesn&#8217;t count the meat that I may need to buy later on or the rolls/buns for sandwich nights- I didn&#8217;t buy that either.</p>
<p>I hate that you have to buy an entire 4 or 8 pack of burger buns/rolls. It gets like 114 degrees here. Bread goes bad faster than you can blink and Hubby&#8217;s not really into freezing &amp; defrosting bread. So I&#8217;ll buy that when we need it. I&#8217;d prefer, though, if WalMart or Albertson&#8217;s gave me the option to just buy <em>three</em> rolls to make sandwiches.</p>
<p>Anyway, my friend Jenny over at <a href="http://www.monkey-toes.com" target="_blank">Monkey Toes Shoes</a> is who inspired me to make a month&#8217;s menu. So, take a look, steal some recipes and enjoy. I use recipes from <a href="http://www.kraftrecipes.com/home.aspx" target="_blank">Kraft Foods Website</a> and the <a href="http://www.5dollardinners.com/" target="_blank">$5 Dinner Mom</a> book that I own.
