Uhh, yummy and easy. That’s all I have to say.

Ingredients

1 onion, chopped

1 (16 ounce) can chili beans

1 (15 ounce) can black beans

1 (15 ounce) can whole kernel corn, drained

1 (8 ounce) can tomato sauce

2 (12 fluid ounce) cans or bottles of beer

2 (10 ounce) cans diced tomatoes with green chilies, undrained

1 (1.25 ounce) package taco seasoning

3 whole skinless, boneless chicken breasts

shredded Cheddar cheese (optional)

sour cream (optional)

crushed tortilla chips (optional)

Directions

Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Drink the other beer for yourself.

You’ll Need:

Sweet and/or hot Italian sausage links, casings removed (We use chicken or turkey sausage)
Crushed garlic
Red, green, and/or yellow peppers, cut into 1/4-inch slices
Onion, cut in half, then cut crosswise into 1/4-inch slices
Sliced white mushrooms (We HATE mushrooms)
1 (28 ounce) can crushed tomatoes
Salt
Black Pepper
Ziti or penne pasta
Shredded part-skim mozzarella cheese
Grated Romano cheese

Get Cooking!

IN deep 12-inch nonstick skillet, cook sausage on medium 10 minutes or until browned, stirring and breaking it up with side of spoon. With slotted spoon, transfer sausage to medium bowl.

IN drippings in skillet, cook garlic, peppers, onion, and mushrooms, covered, 10 minutes. Uncover and cook 8 minutes longer or until vegetables are tender and most of liquid has evaporated.

STIR in tomatoes and salt; heat to boiling on medium-high. Reduce heat to medium-low; cover and cook sauce 10 minutes, stirring occasionally.

MEANWHILE, cook pasta according to package directions, but cook 2 minutes less than recommended cooking time.

PREHEAT oven to 400 degrees F.

RESERVE 1/2 cup pasta cooking water. Drain pasta. Return pasta and reserved cooking water to pot; stir in tomato sauce to coat pasta. Add mozzarella and reserved sausage; toss to combine.

PLACE mixture in a shallow ungreased baking dish. Sprinkle with Romano cheese.

BAKE 20 to 25 minutes or until top browns and sauce is bubbling. Let stand 10 minutes.

Finally, Grub On It!

Philly Cheesesteaks are good, I guess. But if (like me) you don’t eat steak- this is a great take on it. I started ordering these sandwiches at Publix, back when we still lived in Florida. If you know Publix, you know they make good food! The Hubs and I have also found this sandwich shop on base that makes awesome Philly Chicken sandwiches, so I figured I could make it at home myself and it really isn’t that hard.

You’ll Need:

Sandwich Rolls
Sliced chicken (We get ours from the deli)
Provolone Cheese
Green Peppers (I use the frozen kind)
Onions (Again, frozen)
Mayonnaise
PAM (Or your generic cooking oil spray)
French fries

Get Cooking!

COOK french fries according to package directions. (We place ours in the oven- less greasy that way)

While the french fries are cooking:
TEAR up the chicken into smaller pieces and cook in a hot frying pan (or on a griddle if you have one) that has been sprayed with cooking oil.
ADD green peppers and onions to the pan. Cook until chicken has browned and vegetables are slightly crispy/crunchy.
TOP with provolone cheese and allow the cheese to melt. Meanwhile, you can toast the rolls and add mayonnaise to them.
ONCE the provolone cheese has melted, add it to the rolls and serve with french fries.

Finally, Grub On It!

Hubby likes bbq sauce on his.

I though I’d throw some of my culture in this week. I LOVE, LOVE Rice and Peas- my Hubby teases my family & I saying they aren’t peas, but beans. Oh well. This isn’t my recipe, since I make it from memory, I’m not good with precise measurement. So, I found a website that has a recipe synonymous to mine. As always, my changes are in blue. I hope you enjoy!

You’ll Need:

3 cups of rice
1 can of tinned or 1 cup of fresh red peas (either kidney beans or pigeon peas)
(I use canned dark red kidney beans, any brand)
5 cloves of garlic (finely chopped)
1 uncut scotch bonnet pepper (1 jalapeno pepper may be used as a substitute)
3 Scallion (spring onions may be used as a substitute)
1 tin (or one cup) of coconut milk (I use Goya brand)
1 teaspoon of salt (I live in a no-salt household, it still tastes good without it)
1 teaspoon of black pepper
2 sprigs of fresh thyme (2 teaspoons of dried thyme may be used as a substitute)

Get Cooking!

IF you are using fresh peas, wash them. Pour on three cups of water and leave the peas to soak overnight. (If you are using canned peas there is no need to do this)
CRUSH the garlic and add to seven cups of boiling water.
IF you are using fresh peas add them now and boil for 45 minutes. You can test to see if the peas are cooked by crushing them against the lid of the pot. (If they crush easily, you are ready to move on to the next step)
IF you are using canned peas just add them to the pot and move on to the next step.
ADD your coconut milk, rice, salt, black pepper and thyme to the pot.
CRUSH the scallion (do not chop) and add to the pot. Also add the uncut scotch bonnet pepper. *Note- The pepper remains uncut so as to not make the rice spicy, just give it a subtle peppery flavour. (Keep an eye on the pepper so it does not burst, if it does, be prepared for some VERY SPICY rice)
COVER the pot.
THE Rice and Peas should be ready after about 40 minutes (exact cooking time will depend on the brand of rice used).

Finally, Grub On It!

*You can eat it alone, but it is usually served with some sort of meat on the side. My preference is chicken.

You can find the original recipe (from Jamaican Travel and Culture) here. You can also find another Tasty Tuesday from @MySillyBoys here. Happy Eating!
My recipes will always be easy, I’m not about the process- by any means, I’m more about the end result. I’ll have a new one every Tuesday, thus, the birth of “Tasty Tuesday.” Happy Cooking.

A Family Favorite, I call this one my “One-Pot Mexican.” I got the idea originally from Kraft Foods, so I have to thank them for it and I tweaked it and made it work for us. (My revisions are in blue).

You’ll Need:

1 lb. lean ground beef (I use ground turkey)

1 pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix (Store brand works just as well)

1 can (19 oz.) kidney beans, drained, rinsed (I use black beans, though Hubby likes me to use both black & kidney)

1 cup TACO BELL® HOME ORIGINALS® Thick ‘N Chunky Salsa (It doesn’t matter what brand the salsa is- really.)

1 cup water

4 flour tortillas (6 inch), cut into 1-1/2-inch squares (I leave these out)

Get Cooking:

BROWN meat in large nonstick skillet on medium-high heat; drain.

ADD seasoning mix, beans, salsa and water; stir. Bring to boil. Simmer on medium-low heat 5 min.

STIR in tortillas; top with cheese. Cover; let stand 5 min. or until cheese is melted. Top with sour cream and onions.

Other Changes:

I leave out the onions since the Hubs is not a fan.
I add corn to the mix.
I add shredded lettuce as a topping.
I use tortilla chips (instead of the flour tortillas) to dip/scoop it with instead. Pretty much like nachos.
